Freckled Applesauce

With some of the apples from Papa & Grandma Sandy's tree we made Freckled Applesauce. We peeled and cut the apples, cooked them down a bit and smashed them up. Leaving them a little chunky, because that is how we like it. Then, Kendra decided to add raisins and a little cinnamon. We canned it up, shared it with a few friends but ate most of it ourselves. Yummy!!!

5 Vegetable Soup

At the store today Kendra picked out 5 vegetables to make this soup. Now that she is 5 years old, it's all about the number 5, 5 of everything, 5 minutes, 5 bites, 5 turns, 5 kisses, 5  books, 5, 5, 5, 5, 5!!!  Anyway, I was pretty suprised at how yummy this turned out. When she was eating it she liked it so much she said "I just can't keep my mouth away from it!"
  • 1 head of califlour
  • 1 red bell pepper
  • a small bunch of baby asparagras
  • 2 med size zucchini
  • 20 baby cattots (or maybe 3 large carrots)
  • one can of vegetable stock (or chicken if you'd like)
  • Savery
  • Celery salt
  • Rosemary
  • Salt and pepper

Wash and cut up all the vegetables. Her little fingers were great at picking out all the little seads in the bell pepper. Put vegetables in a large pot and cover with water and add seasionings. She smelled every bottle in the spice rack and this is what she picked out. Boil till carrtos are soft then put everything in a blender (be VERYcarefull blending hot things!) We had to do this in two batches. Put it all back on the pot and add the can of vegetable stock and return to a slow simmer. Serve with a dollop of sour cream or sprinkeled with parmasan cheese.

 I think next time a suqash would be really good in this and even an onion or some beets would really sweeten it up and make a pretty color too.

Freckeled Apple Sauce

For her 5 year old birthday Kendra received 2 chef hats and a few aprons. She roates through them every time she is cooking something. I LOVE the Hats!!

With all of the apples from Grandma Sandy & Papa's tree, we made a LOT of applesauce. Today we made a Kook Kendra Kreation: Freckeled Apple Sauce!

20 - 30 apples
splash of 100% apple juice
1 T lemon juice
2 T cinnimon (or more)
1 t gound cloves (or less)
1 cup rasions (or more)

Peal & slice apples, place them in a large pot with splash of 100% apple juice. Cook them down, stiring & smashing with a potato masher till they are soft. We like it pretty chunky, so we don't mash it all up. Once the apples are to the texture of your liking, add lemmon juice & spices. (You can add sugar if you want but we choose not to). Last add in raisins we used dark and like rasions this time. While sauce is still hot place into steralized canning jars.

Brownie Balls

This one is for "Peter"! Kendra couldn't ask for a nicer neighbor!

All you need is:
*One box of brownie mix
*Apx 1 cup powdered sugar

Bake the brownies as instructed on the box. Let them cool on the counter. Then dig out the soft center of the batch of brownies (leave edges) with a tabe spoon. Roll each spoon full of brownie in your (very well washed four year old) hands until it forms a nice little ball. Then roll the brwonie ball in the powdered sugar. Done.

Miss Kendra enjoys making these when we have garage slaes. She sells a small bag of them for .50 each. That has contributed to our very nice swing set in the back yard and to our up-comming Disneyland trip! When she runs out, people that have been to previous garage sales, ask for them.

Ants On a Log

You need:
a knife, a cutting board, paper towels and:
* Celery
* Peanut butter
* Raisins
* Cream cheese
* Seasoning salt

Wash celery and dry with paper towel. Cut celery into 3 inch pieces. Just fill with either peanut butter or cream cheese. Top the peanut butter with raisins. Sprinkle the cream cheese with seasoning salt. You can peal the back side of the celery if you are making it for my little brothers because it's hard for them to chew the strings until the get bigger teeth.
